Among the many varieties of orak arik, I would consider this one with green bean and carrot as the most basic one. As I have mentioned in my previous orak arik post, you can make an orak arik dish as long as you have some eggs and any extra vegetables you can spare, making this an excellent dish to finish off an odd stick or two of carrot or celery, just to name a view.

Ingredients
4 eggs
1/2 teaspoon salt
1/2 teaspoon ground white/black pepper
3 tablespoon oil
3 cloves garlic, minced
50 gram shallot, thinly sliced
250 gram carrot, julienned
250 gram green bean, sliced diagonally
1 tablespoon soy sauce
1/2 tablespoon fish sauce
1/2 tablespoon sugar
1/2 teaspoon ground white/black pepper
3 red fresno chili peppers, seeded and thinly sliced
3 scallions, thinly sliced
Instructions
In a mixing bow, lightly beat eggs with salt and black pepper. Set aside.
Heat oil in a wok/frying pan on medium high. Sauté garlic and shallot until fragrant, about 3 minutes.
Add carrot and green bean, stir to mix well. Cook for 1 minute. Push the vegetables to one side.
Pour egg to the empty side of the wok/pan, stir to make crumbled egg. Then mix with the rest of the vegetables. Season with soy sauce, fish sauce, sugar, and pepper.
Add chili peppers and scallions, mix well. Turn off heat. Serve with steamed white rice.
